Ingredients

  • 2 boneless/skinless Chicken Breasts
  • 3/4 cup Mayonnaise
  • 1/2 cup freshly grated Parmesan Cheese
  • 6 tbsp Traditional Italian breadcrumbs
  • 1/2 tbsp Black Pepper
  • 1/4 tbsp Salt
  • 1/4 tbsp Italian Seasoning

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Slice the chicken breasts in half horizontally to make 4 thin chicken breasts.
  3. Line a sheet pan with parchment paper and place chicken breasts on the pan.
  4. Season each side of the chicken breasts with salt, pepper, and Italian seasoning (1/4 tbsp of each).
  5. In a bowl, combine mayonnaise, parmesan cheese, 2 tbsp of breadcrumbs, and 1/4 tbsp of pepper. Mix well.
  6. Spread the mayo mixture evenly on top of each chicken breast.
  7. Sprinkle the remaining 4 tbsp of breadcrumbs on top (add more if needed to cover the entire chicken breasts).
  8. Bake for 15-20 minutes, or until the internal temperature reaches at least 165°F (74°C).
  9. Remove from oven and let sit for 5 minutes before serving.

Chef's Notes

  • Traditional breadcrumbs work better than panko for this recipe.
  • For best results, use freshly ground black pepper and freshly grated parmesan cheese.
  • Make sure to let the chicken rest after baking for the juiciest results.
  • Serve with Roasted Broccoli & White Rice for a complete meal.
