Ingredients

  • 1 Sponge cake layers
  • 1 Raspberry jam or applesauce/apple butter
  • 1 Vanilla custard
  • 1 Whipped cream
  • 1 Green marzipan for covering
  • 1 Powdered sugar for dusting

Instructions

  1. Prepare sponge cake layers. Let cool.
  2. Spread jam or applesauce over one layer. Top with sponge.
  3. Add custard, another sponge, and mound whipped cream over top.
  4. Cover entire cake with green-tinted marzipan.
  5. Chill, then dust with powdered sugar before serving.

Chef's Notes

  • Use marzipan (not almond paste) for smoother coverage.
  • Whip eggs and sugar fully for cake volume.
  • Use almond paste for rose decoration.
  • Make cake layers and custard up to 2 days ahead.
  • Assemble cake the day before and chill overnight.
  • Bring to room temp 30 min before serving.
