Ingredients

  • 2 tablespoons olive oil
  • 1 ½ cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 ½ cup panko breadcrumbs
  • 1 ¼ cup Parmesan cheese
  • 1 large egg, whisked
  • 1/3 cup milk
  • 1 teaspoon salt
  • 1 ¼ teaspoon oregano
  • 1 ¼ teaspoon ground allspice
  • 1 ¼ teaspoon ground nutmeg
  • 1 ¼ teaspoon pepper
  • 1 ¾ lb. ground beef
  • 1 ½ lb. ground pork
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups beef broth
  • 1 cube chicken bouillon
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried parsley
  • 1 ½ cup sour cream

Instructions

  1. Sauté onion and garlic. Cool.
  2. Mix meatball ingredients and form into 1½-inch balls. Chill.
  3. Brown meatballs in olive oil. Set aside.
  4. Make roux with butter and flour. Add broth mixture gradually.
  5. Temper sour cream, then stir into sauce.
  6. Add meatballs to sauce and simmer until cooked through.
  7. Serve over mashed potatoes or noodles.

Chef's Notes

  • Full-fat sour cream prevents curdling.
  • Use beef bouillon if needed.
  • Mix of beef, pork, or veal works well.
  • Chill meatballs before browning.
  • Let meatballs simmer gently in sauce.
